Hello from Puerto Rico day three!! Sorry I didn't post last night, but honestly I was just WAAAAYYYY too tired. We've been busy man! But also yesterday was sort of a chill stormy quiet day, so I didn't really even have much to post. SO I've combined photos from yesterday AND today to give y'all a compilation of all the good Vieques stuff that's been going on lately.

Some highlights have definitely been the Bioluminescent Bay (which unfortunately none of my photos turned out for, so I have none) some amazing restaurants, and a whole lot of beaching. The thing with Vieques beaches is, is that they are all pretty much private. All of the beaches you have to drive to and then walk a little bit to, but that means they are totally secluded and quiet, which is AHHHMAZING for beaching. I mean, yes we have a beach in our backyard (featured above) but the current is too rough and it's sorta rocky, the other side of the island has better ones. And let me tell you they are BEAUTIFUL!

Anyway! Here are some pics that sum up these past few days :)

SURPRISE! I'M IN VIEQUES!

HEY HEY HEY! Guess what?! I'M IN VIEQUES, PUERTO RICO! And man oh MAN is it beautiful! Today was only day one and so far nothing is better than this!
So, yesterday we arrived by this teeny tiny plane (which I flew by the way... more on that later), unfortunately Isabelle was on a different flight so we weren't with her until our final destination, and even more unfortunate, Ally couldn't come at all because she's doing a family spring break :(( Ally, you are very very very missed D: WE LOVE YOU!!!
 Here's what Vieques looks like from the sky. Look at that water! It's crystal clear!
Today we spent most of the time at the beach: snorkeling, doing yoga, taking naps, livin easy, you know you know, all that good stuff...

The beach we went to was a private beach called La Chiva or Blue Beach. All the beaches have Puerto Rican names and then military color names from the Navy. I've only ever been to North Carolina and New Jersey beaches, so I'm used to super dark and frothy oceans with large waves and plenty of people. But here, the water is warm, clear as day and the beaches are empty. This is my place. I don't think I'll ever leave...
This is the little town of Esperanza, it has a whole strip of restaurants that over look the water and all have terrific views of the sunset! We just stopped in for some shopping, where I bought a hammock (totally a good buy I swear it was not impulsive, I've had my eye on a hammock for god knows how long), and then I'm pretty sure are going there for dinner or something tomorrow. Woohoo!!
And yeah! That's pretty much it! God guys, I'm so sooooooOOOOO happy. The only thing that could make this better is having Ally here, but we know she's only a FaceTime away :)
I promise to post all throughout the week!! Also I'm working on a video too! Get excited!!!

Easy Gluten Free Pumpkin Bread!! (YUM!)

Hey guys! While my grandma was in town, we wanted to bake something... See she's gone gluten free so we had to make sure to factor that into the mix (literally... the bread mix haha wink wink) I'd really been craving pumpkin pie (weird I don't know) soooo we decided to settle on a gluten free pumpkin bread. I know I know, pumpkin is a fall thing, but hey! It is just as good (maybe even better) in spring!!

Here's what you'll need, it's super easy:
12 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1 (15 ounce) can of pumpkin
2 cups gluten-free flour
1 12 teaspoons pumpkin pie spice
1 teaspoon baking soda
12 teaspoon salt
To get started, pre-heat your oven to 325 degrees, and lightly grease the bread pan.

Cream butter and sugar until light and fluffy. Add eggs, mixing well after each one. Add Vanilla and pumpkin and mix until well-blended. Funny story, when I was attempting to make this and be a total master baker, I totally messed with the recipe and but two sticks of butter instead of one. We didn't realize until after putting in all the sugar in with it. Clever Mimi figured it out and sorted it all to it's regular amount. BUT now we had all this extra weird sugar butter... we put it in a little dish and spread it on our bread when it was done! And it was SO good! 

In a separate bowl, mix remaining dry ingredients. Gradually add flour mixture to the pumpkin mixture and stir until combined. Do not over-mix.
Pour the mixture into the prepared bread pan and bake one hour to one hour and ten minutes. Depending on your pan/oven you might have to pop it back in for a little bit, we sure had to. But then again I wasn't paying attention and set the oven heat to 275, we had to cook it for two hours... hahaha oooooops.

Last Day

 Remember in my last post how I said that it is finally spring break and now I have the chance to really sit down and blog like a madwoman? Yeah well... now here we are, it's the last day of spring break and I have blogged zero, my sincerest apologies. It's not that I have really even been busy at all, I've just been busy doing nothing; relaxing, I suppose you could say. And it's been really flipping nice. However I go back to school tomorrow and I will be blogging my daily outfits as much as I can.

It's interesting, typically when a break dwindles down to an end and I have to reroute my sleep schedule so I am prepared for early school mornings... I get pretty excited to go back. As much as I love breaks, I always find myself getting the feeling of wanting to go back. I like being in a routine and I like the structure of school. But this time around I'm not excited at all. I think maybe it's because my favorite teacher is still on maternity leave and I don't want to come back with her not there... Or just that it's been two weeks and I've gotten so used to being away. Plus it's my second semester of my junior year, and that means a heck of a lot of work. Oh man.... here we go.

Elizabeth arrived at my house head to toe in Forever 21, a woman after my own heart obvi... hahaha I had this idea for a photoshoot, but then we never actually went to the desired location of my idea, we just stuck with the classic train tracks, and it turned out to be even better than my old idea! I won't tell you what it is, because I will most likely do it in the future... Anyway, I love all of these photos of Elizabeth, they are so summery. It was perfectly windy yesterday which actually made for some cool hair photos.

It's been pretty warm here ever since I got home from India which has been fantastic. When we first touched down in DC and I saw snow on the ground I was about to be really upset. I just came from 80 degree weather and here I am in the homeland, with 30 degree weather?!?!? I thought I escaped this!! Butttttttttt it's surprisingly been in the high 50-60s, and BEAUTIFUL! I hope it lasts!
