SUPER EASY CHOCOLATE CHIP BANANA BREAD

Good morning loves! Lately I have been craving banana bread like no other, so it was sort of perfect when I realized we had these neglected bananas laying around our kitchen!! The best thing about this recipe for me was that I didn't even have to leave my house for a single thing! It was all right here :) (okay that's kind of a lie, I had to borrow the pan from a neighbor... but anyway...) It's so so easy to make and omg, SO DELISH! Okay, what are we waiting for! Let's get started!
HERE'S WHAT YOU NEED:
2-3 rather ripe bananas, peeled (ripe enough to be super mushy and gooey)
1/3 cup of melted butter
1 teaspoon of baking soda
pinch of salt
3/4 cup of sugar
1 egg, beaten
1 teaspoon of vanilla extract
1 1/2 cups of all-purpose flour
AND HERE'S HOW TO DO IT:
preheat the oven to 350ΒΊF (175ΒΊC), and butter a 4x8inch loaf pan

in a mixing bowl, mix together butter, baking soda, salt, sugar, vanilla extract, flour and the already beaten egg.

do your best to squish bananas while they are still in the peel! This will reduce mashing with a fork, which is harder than it looks.

mix everything together until you've reached about the constancy pictured below
adding chocolate chips is optional, I did and I don't regret it... just saying, it's delicious.
pour the batter into your prepared pan and bake for 50 minutes to an hour, I did mine for 50 just fine, but every oven is different. Know your oven, connect with your oven, BE YOUR OVEN!
And there you have it!!! A beautiful loaf of your very own!! I should say, "once you remove it from the oven, set and let cool for at least 30 minutes to an hour before removing it from the pan and slicing..." but who am I kidding, I'm impatient as heck and dug right in... But hey! It's better warm anyway!

FRESH VEGAN TOAST 4 WAYS

Good Morning lovelies :) the other day Joanna and I were experimenting with different toast toppings, and they actually turned out really well, so I thought I'd share! For the toast, all each one is the 7 grain ezekiel bread, which is soooo good!
STRAWBERRY TOAST:

For the base we blended up some Tofutti vegan cream cheese and fresh cut strawberries, we didn't measure anything specifically out just sort of added to taste and how we much we felt we needed. We also didn't blend it up completely, we left some strawberry chunks in there for texture.

And then just top with Strawberries and Pomegranates :)
CHOCOLATE BANANA TOAST:

This was our most simple toast, the base was just Justin's chocolate peanut butter, then topped with sliced bananas and more pomegranates.

Unfortunately, this toast turned out to be pretty dry, so I recommend adding more bananas or blueberries.

CLASSIC AVOCADO TOAST:

A fan favorite, the base is simply just mashed avocado!

Topped with baby tomatoes, sesame seeds, and if you like, balsamic vinegar- which isn't shown in the picture because it's really seriously unphotogenic.
BLUEBERRY BANANA TOAST:

For this toast, we did the same thing we did for the strawberry toast, mixed Tofutti cream cheese and chopped blueberries. This was pretty tangy tasting, so we also added sugar to taste.

Then for the top, as you can see, bananas and blueberries!! Piece of cake!

I made a Smoothie Bowl!! And so can you!

So after drooling over Instagram at literally all of what Lee Tilghman's photos, I decided to try my hand at making my own smoothie bowl. No I didn't have acai or goji berries or various seeds, yes my berries were frozen, but I wasn't about to spend eight million dollars on fresh ingredients just for my trial... Anyway, here it is :)
 Well first obviously, you need a blender... fill it up with milk, a banana, raspberries...
 strawberries...
 and blend!
Note: DON'T UNDERESTIMATE YOUR BOWL, IT'S PROBABLY SMALLER THAN YOU THINK, YOU WILL MAKE A MASSIVE MESS. Just a warning.... cause I totally did...
 Align some granola...
 some blue berries...
and more raspberries! And you're complete!! Enjoy :)
